Huevos Rancheros
They said it couldn't be done. They kicked me out of the Keto Culinary Society for suggesting it. And yet here it is, no compromises: Keto Huevos Rancheros!

A recreation of the restaurant-style huevos rancheros I've experienced so many times, except just a bit better — built from crisped tortillas, refried beans, eggs, bright ranchero salsa, and avocado.
Huevos Rancheros is typically a carb-heavy dish that isn't compatible with low-carb eating. For this version each component has been constructed in a low-carb manner while never sacrificing quality. As the Invisible Keto concept promises, your guests (and your palate!) will never know.
Ingredients
- 2 small Fried Tortillas
- Refried Beans
- Roasted Jalapeño Salsa
- 2 eggs per serving, your preferred style or Sous Vide Eggs
- Avocado, cotija cheese, and any other garnishes you'd like
