Fried Artichokes
This is inspired by a classic Roman recipe.

A very simple recipe that will surprise and delight guests; the potato chip crunch and taste of the leaves contrasts with the perfectly cooked tender center.
Ingredients
- 4 Large Artichokes or 8 Baby Artichokes (make as much as or as little as you need)
- 2 Cups of Canola Oil
- 2-3 Cups of Extra Virgin Olive Oil
- Salt to taste
- 1 Lemon to prevent Artichoke Oxidation
- 1 Lemon for mayo and garnish
- 1/2 Cup of Mayo
Method
- The first step is to prepare and clean the artichokes. Then start removing the outer, tough green leaves by tearing them off by hand until you get to the layer of leaves where the bottom half begin to turn yellow. Then cut off the end of the stem of the artichoke and then with a pairing knife, cut away the tough fibers outer part of the stem to reveal the edible tender interior. Then take the paring knife and clean up any of the dark green, tough bits that are still visible around the bottom of the artichoke.
- Then hold the artichoke upright and with the pairing knife, cut the artichoke at a 45-degree angle, like you’re shaving a pencil, and try to remove all the dark green tough parts of the leaves while keeping the edible tender yellow part of the leaves intact. The layers should taper toward the top because you were cutting at an angle. Once you reveal the center leaves, you can cut those across, and then with your knife, cut out the center purple leaves to expose the choke and then with a spoon, scrape out all of the choke that you can. There will be a lot so make sure you clean it well. If using baby artichokes, you won’t need to do this step because the choke in baby artichokes is edible. In the whole process of trimming the artichokes, make sure you have a cut lemon and you are rubbing the lemon against any freshly cut part of the artichoke to prevent oxidation.
- Bring a heavy-bottomed pot of 50/50 canola oil and extra virgin olive oil and bring it up to about 310°F degrees to start — once the artichokes are added the temperature will go down and the goal is to keep it around 280°F.
- Drop them into the oil for their first fry. This fry is to cook the artichokes through. Fry them anywhere from 10-15 minutes or until the heart becomes fork-tender or has no resistance when you insert a cake tester. After the first fry, the leaves should be lightly browned and crisp, and the leaves should begin to open up. Transfer to a wire rack upside down so the oil can drain, season with a little salt, and let it cool until it's cool enough to handle.
- While the artichokes cool, raise the temp of the oil up to 350°F degrees for the second fry. This fry is to ensure the leaves get crispy. Once the artichokes are cooled and the temp is hot, take the artichokes and begin to open up the leaves, exposing them the best you can so that you can achieve maximum crispy on the leaves. Then place them in the oil, leaves down, and push it into the bottom of the pan for a few seconds, as if you were trying to flatten out the artichoke. Then add the rest of the artichokes and repeat. Once crispy and golden brown, then remove from the oil and transfer to a wire rack to drain upside down and season with salt.
- While it cools, combine mayo with salt and lemon juice and mix well.
Serve the fried artichokes, lemon wedges and lemon mayo.
Dip
For about ½ cup:
- ½ cup mayonnaise
- 1 anchovy fillet
- 1 small confit garlic clove, mashed
- 1 teaspoon finely grated lemon zest
- 1–2 teaspoons lemon juice
- 1 teaspoon roasted-garlic EVOO
- 1 tablespoon finely chopped parsley
- Black pepper
- Salt only after tasting
