Low-carbohydrate cooking does not need one universal rice substitute. The useful question is what the starch or bread contributes to the dish: an absorbent bed, a crisp scoop, a soft sauce carrier, or a cohesive structure. Choose a component that can perform that role convincingly, rather than forcing one substitute into every application.
Cauliflower Rice: Rice Substitute
Cauliflower Rice or a cauliflower-konjac blend is useful as a loose plate carrier where a vegetable base is acceptable. It does not absorb liquid like rice.
Pressed Cauliflower Rice: Structural Rice Substitute
Pressed Cauliflower Rice holds a compact shape for preparations such as musubi. It is not an ordinary loose rice bed.
Keto Wrappers (naan, roti)
Serve a whole warmed low-carb tortilla with butter chicken, curries, and similar saucy dishes. It functions as a naan-like carrier for sauce and other components.
Tortilla Chips: Crisp Scoop

Rice Bed Substitute: Tortilla Bed
Cut a low-carb tortilla into small pieces, toast only until dry rather than hard, then warm the fragments with a small amount of sauce or stock. This is a developing approach for dishes such as Loco Moco, where the bed must take up gravy, yolk, and meat juices.
The fragments should remain distinct enough to absorb sauce without becoming paste-like. Avoid reducing dry tortillas to fine crumbs before testing; that is more likely to behave like breading or stuffing than a bed.
Tested Result: Fish Curry
Toasting cut low-carb tortilla pieces before serving them with fish curry kept the pieces from becoming wholly mushy. They absorbed some sauce while retaining enough structure to hold it together in a forkable scoop, rather than allowing the sauce to run across the bowl.
Conventional Rice
Conventional rice remains the best culinary choice when its absorption and familiar texture are essential, particularly for diners who are not eating low-carb.
Development Priorities
