Peanut Oil
Peanut oil is a cooking oil pressed from peanuts and is especially valued for high‑heat cooking. It has a relatively high smoke point (around 450°F / 232°C) and a mild flavor that does not strongly interfere with other ingredients. Because of these qualities it is commonly used for deep frying.
Peanut oil is widely used in Chinese cooking and other Asian cuisines, where it is suitable for stir‑frying, shallow frying, and wok cooking. The oil’s stability at high temperatures helps produce the rapid browning and searing associated with these techniques.
Deep Frying
Peanut oil is one of the most popular oils for deep frying because it tolerates repeated heating cycles reasonably well and produces crisp results without leaving heavy flavors on the food.
Because of its neutral flavor, peanut oil is also often used in restaurant fryers where a single oil must work across many different foods.
Storage
Like most refined oils, peanut oil should be stored in a sealed container away from heat and sunlight. Properly stored, it keeps well for many months. Large containers are common because the oil is frequently used in bulk for frying.
