For burgers

Onions are treated as a supporting flavor structure, not a garnish. These should be prepared before cooking the burgers and held warm.

Stage 1 – Deep Browning - Thinly slice onions pole-to-pole. - Cook slowly in fat until deeply golden and jammy. - Lightly salt during cooking.

Stage 2 – Brightening Marinade - While still warm, toss with a small amount of sherry vinegar or red wine vinegar. - Optional pinch of sugar or black pepper.

Result: onions that are sweet, savory, and lightly acidic, cutting richness without dominating.
