Mexican Chorizo
Unlike its dry-cured Spanish counterpart, Mexican chorizo is a fresh sausage, seasoned with warm spices and vinegar. Tart and hot, it's great as a taco filling, on top of nachos, cooked and stirred into a cheese dip, or simmered, sliced, and served with beans.
Ingredients
- 2 medium cloves garlic, minced or grated on a Microplane (about 2 teaspoons)
- 3 tablespoons red wine vinegar
- 1 tablespoon paprika
- ½ teaspoon cayenne pepper
- ¼ teaspoon ground cinnamon
- ¼ teaspoon ground cloves
- 1 teaspoon ground cumin
- 1 teaspoon dried oregano
- ½ teaspoon freshly ground black pepper
