Xanthan

Xanthan gum is a powerful modern thickener used in very small quantities. It is particularly useful for keto cooking because it replaces starch-based thickeners like flour or cornstarch without adding carbohydrates.

Unlike flour or roux, xanthan contributes structure without flavor and works at extremely low concentrations.

Because xanthan is so strong, it must be used with restraint. Only 0.1–0.2% by weight is required in most sauces (1/8 tsp per cup of liquid).

More is not better. Too much produces a slimy or gel-like texture.

Always start small. Never add in a single pile; ideally whisk or blend to incorporate it.
