Shrimp Fritters
It's shrimp. It's fried.

Ingredients
- 1 pound shrimp, preferably large-medium (about 28–32 per pound)
Marinade
- 1 teaspoon minced garlic
- 1 tablespoon grated fresh ginger root
- 1–2 green chilies, seeded and minced
- ½ teaspoon kosher salt
- Juice of ¼ lemon
Batter
- 1 cup loosely packed sharp cheddar
- 1/3 cup loosely packed pork rind panko
Method
- Shell the shrimp, leaving the tails attached. Devein, rinse under cold water, and pat completely dry.
- Combine the marinade ingredients. Toss with the shrimp until evenly coated.
- Cover and marinate for 2 hours at room temperature, or overnight in the refrigerator.
- Hold each shrimp by the tail and dip into the batter. Allow excess batter to drip off.
Fry the shrimp
Air fryer (preferred): 390°F for 6 minutes. Stovetop: Heat 2 inches of oil to 350°F–375°F. Fry 6–8 shrimp at a time until light golden brown and crisp, about 2–3 minutes per side.
Serve immediately.
