Shrimp Fritters

It's shrimp. It's fried.

Ingredients

  • 1 pound shrimp, preferably large-medium (about 28–32 per pound)

Marinade

  • 1 teaspoon minced garlic
  • 1 tablespoon grated fresh ginger root
  • 1–2 green chilies, seeded and minced
  • ½ teaspoon kosher salt
  • Juice of ¼ lemon

Batter

  • 1 cup loosely packed sharp cheddar
  • 1/3 cup loosely packed pork rind panko

Method

  1. Shell the shrimp, leaving the tails attached. Devein, rinse under cold water, and pat completely dry.
  2. Combine the marinade ingredients. Toss with the shrimp until evenly coated.
  3. Cover and marinate for 2 hours at room temperature, or overnight in the refrigerator.
  4. Hold each shrimp by the tail and dip into the batter. Allow excess batter to drip off.

Fry the shrimp

Air fryer (preferred): 390°F for 6 minutes. Stovetop: Heat 2 inches of oil to 350°F–375°F. Fry 6–8 shrimp at a time until light golden brown and crisp, about 2–3 minutes per side.

Serve immediately.
