Sweet Tomato Relish

This is basically Indian-style ketchup, perfect as a dipping sauce for fried foods.

Ingredients

Makes 2½ cups.

Tomato sauce

  • 2 pounds red ripe tomatoes, blanched, peeled, and coarsely chopped
  • 1 medium onion, peeled and finely chopped
  • 1½ teaspoons finely chopped garlic
  • 1 tablespoon freshly grated ginger

Relish

  • ⅓ cup cider vinegar
  • ¼ teaspoon ground clove (optional)
  • ½ teaspoon paprika
  • ¼–½ teaspoon red pepper
  • ⅔ cup allulose
  • 2 teaspoons Kosher salt

Method

  1. Put the tomato sauce ingredients in a dutch oven and bring to a boil.
  2. Reduce heat and simmer, uncovered, stirring occasionally until the tomatoes are soft and reduced to a thick puree, about 45 minutes.
  3. Strain the puree through a sieve into a small bowl.
  4. Return puree to the pan, add the relish ingredients and bring again to a boil.
  5. Reduce heat and simmer, uncovered, stirring often for 30 minutes or until the sauce turns thick and glossy and coats a spoon.

Let the relish rest at least 2 days before serving.

Storage

  • Refrigerate in an airtight container for up to 2–3 months.
  • Freeze in small portions for up to 1 year.
