Sweet Tomato Relish
This is basically Indian-style ketchup, perfect as a dipping sauce for fried foods.
Ingredients
Makes 2½ cups.
Tomato sauce
- 2 pounds red ripe tomatoes, blanched, peeled, and coarsely chopped
- 1 medium onion, peeled and finely chopped
- 1½ teaspoons finely chopped garlic
- 1 tablespoon freshly grated ginger
Relish
- ⅓ cup cider vinegar
- ¼ teaspoon ground clove (optional)
- ½ teaspoon paprika
- ¼–½ teaspoon red pepper
- ⅔ cup allulose
- 2 teaspoons Kosher salt
Method
- Put the tomato sauce ingredients in a dutch oven and bring to a boil.
- Reduce heat and simmer, uncovered, stirring occasionally until the tomatoes are soft and reduced to a thick puree, about 45 minutes.
- Strain the puree through a sieve into a small bowl.
- Return puree to the pan, add the relish ingredients and bring again to a boil.
- Reduce heat and simmer, uncovered, stirring often for 30 minutes or until the sauce turns thick and glossy and coats a spoon.
Let the relish rest at least 2 days before serving.
Storage
- Refrigerate in an airtight container for up to 2–3 months.
- Freeze in small portions for up to 1 year.
