Stuffed Sausage Roll
Traditional sausage rolls wrap sausage meat in pastry. This recipe reverses the idea by using sausage as the wrapper and placing the filling inside. The result is fully keto while retaining the appeal of a classic stuffed pastry.
This recipe is a template. You can switch up the type of sausage and fillings as desired. Providing an acidic dip like Sweet Tomato Relish to helps significantly to counter the heaviness of the sausage.
Ingredients
- 1/8 pound Hot Italian Sausage per roll (or your favorite Sausage.)
Filling
- 1/4 cup Caramelized Onions
- 2 ounces mushrooms, finely chopped and cooked dry, and/or 1 tablespoon dried mushroom powder
- 2 ounces mozzarella cheese, diced or shredded
- 1 tablespoon grated Parmesan cheese
- 1/2 teaspoon Roasted Garlic, mashed
- 1 slice Bacon, cooked and crumbled
Method
You can use an air fryer or an oven.
Prep
- Chill the sausage in the fridge for an hour or more, or in the freezer for 15-29 minutes.
- Line a sheet pan with parchment paper.
- Air Fryer: Preheat to 350°F (175°C)
- Oven: Preheat to 375°F (190°C).
Form the Roll
- In a bowl, combine the filling ingredients.
- Place sausage between two sheets of parchment paper and roll to approximately 1/8 inch thick. A rolling pin with thickness guides works well for this.
- Form into a rectangle and spread the filling down the center third of the sausage, leaving a border around the edges.
- Use the parchment paper to help fold the sausage over the filling from both sides, sealing the seams and enclosing the filling completely.
- Pinch the seams closed and shape into a uniform log.
- Transfer to the prepared sheet pan with the seam side down.
Bake
- Air Fry or bake until the sausage reaches an internal temperature of 160°F (71°C), around 10 minutes for an individual role.
- Rest for 10 minutes before slicing and serving.
- Slice into thick rounds and serve.
Storage
- Refrigerate leftover stuffed sausage roll in an airtight container for up to 4 days.
- Freeze whole or in individual portions for up to 3 months.
- For best results, wrap tightly and then vacuum seal or place in a freezer bag.
- Thaw overnight in the refrigerator before reheating.
- Reheat in a 350°F (175°C) oven for 10–15 minutes or until heated through.
- Alternatively, reheat slices in a 350°F (175°C) air fryer for 3–5 minutes.
